There’s Always Paris and Profiteroles

The brisk morning air sent a memorable chill through me as I walked the dog on our morning jaunt. The sunshine dappled through the almost changing leaves and there was that sense of seasonal change in the breeze. Nostalgia grabbed a hold of me and my thoughts turned to Paris. I visited once in early October and today reminded me of that trip. My mind flooded with all the things I cherished in that city, but between you and me, I wanted to dislike it, because everyone loves Paris, but once there, how could I object to something so wonderful!?

Vietnamese Coffee and Peanut Sesame Gelato

Coconut Sticky Rice with Mango

The most important ingredient in this dish is the mango.  The sticky rice and coconut milk are the backdrop to this “king of fruit”. The best mango for this dessert is a small, sweet yellow type called Ataulfo (Honey Mango or Manila Mango). It is non-fiborous and widely available throughout the United States. Only the ripest (sweetest)  mangoes should be used and can be detected by touch and smell. The ataulfo mango will be yellow, supple to the touch with a full-fruity aroma and the skin may have a slight wrinkling to it which means it is at perfection!
