Grapefruit Chia Pudding and Carne Alla Pizzaiola: Whole30 Day Twenty-Two

DAY TWENTY-TWO

It’s the end of the week, and I’m plumb tired of cooking and prepping and thinking of things to make. I started out strong with breakfast, went downhill by skipping lunch and breaking a Whole30 rule of three meals a day and thankfully, E stepped in to help with dinner, so we ended on a high note. Sometimes you just have to do the best you can.

Grapefruit Chia PuddingBreakfast: Juicy, pink grapefruit with chia pudding, topped with blueberries and coconut flakes.
GRAPEFRUIT CHIA PUDDING
Serves 2
Ingredients:
2 grapefruits, supreme
1/2 cup chia pudding
blueberries and sliced almonds to top
Preparation: Layer and enjoy.

Lunch: Failed. Skipped. Completely. I did have some tea and a banana, but other than that, I was bad and lazy and didn’t have three meals today.

CARNE ALLA PIZZAIOLA WITH MELANZANA FRITTADinner: My cooking motivation was out the window today, I had nothing and frankly, I was tired. I wanted to throw in the towel, order a pizza and lie in front of the warm fire with a good book. Thankfully, E stepped in and made his Nonna’s pizzaola… no, it’s not pizza, sounds like pizza, but it’s actually a “Pizza Maker’s Beef” We ate ours with fried eggplant and bitter rapini.
